Lentil & Tomato Shakshuka from YOU ARE WHAT YOU EAT

Lentil & Tomato Shakshuka

This hearty, protein-packed pan of peppers, tomatoes, lentils and eggs will set you up for a busy day and keep you fuller for longer.

Lentil Shakshuka

Ingredients (serves 4)

  • 1 tbsp extra virgin olive oil
  • 1 onion, diced
  • 2 red peppers, deseeded and diced
  • Pinch of salt
  • 1 x 400g tin green lentils, drained and rinsed
  • 1 x 400g tin chopped tomatoes
  • 1 tbsp balsamic vinegar
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 4 eggs

TO SERVE

  • 3 tbsp natural yoghurt
  • Handful of fresh parsley, roughly chopped
  • Handful of fresh dill, roughly chopped
  • 4 wholemeal pita breads, toasted

Method

1. Heat the oil in a large frying pan over a medium heat and sauté the onion and peppers with a pinch of salt until softened and turning golden, about 10 minutes.

2. Tip in the lentils, tomatoes, vinegar, paprika and cumin. Stir well to combine then leave to simmer for 5 minutes until slightly thickened and reduced. Taste and season with salt, as needed.

3. Make 4 wells in the tomato mixture and crack in the eggs. Turn the heat down to low, cover with a lid and leave to cook until the eggs are set to your liking.

4. Remove from the heat, garnish with the yoghurt and fresh herbs, and serve with the toasted pita.
