HQ’s Favourite Five: BOSH!

This month BOSH! turns five years old! To celebrate, we asked Team HQ to pick their favourite five recipes and extracts from each of the five BOSH! books.

In today’s round-up, we have five delicious takeaway inspired recipes from the first ever BOSH! cookbook. Have you tried any of these?!

PAD THAI

Pad Thai varies everywhere you go, but typically includes the artful placement of fresh lime, peanuts and spring onions around the bowl. We like to replicate this and serve it with chilli flakes, sweet chilli sauce and sriracha.

CRISPY CHILLI TOFU

This is the BOSH! take on one of our favourite Chinese takeaway dishes. It’s spicy, full of umami flavour, sticky, gooey and incredibly moreish. Often when you buy this kind of dish it’s filled with MSG, but the BOSH! version is much healthier, with a base of orange juice and sweet chilli sauce adding the main sweet tang.

JACKFRUIT TACOS

Jackfruit is a fantastic and crowd-pleasing ingredient with a fibrous texture and flesh that soaks up flavour brilliantly, but it can be hard to find. Try your local Asian supermarket and be sure to choose green jackfruit in water. These tacos are perfect finger food, combining tasty jackfruit with a Mexican combo of zingy salsa and creamy guacamole.

MIDDLE EAST PIZZA

With its Middle Eastern vibes, this pizza is a clear winner on pizza night. Feel free to play around with the ingredients. BOSH! use lots of jarred ingredients, so it’s a great store cupboard standby. Serve alongside hummus, tapenade and any other mezze dishes you can think of!

CREAMY KORMA

Korma is often thought of as an accessible beginner’s curry. But, let’s be honest, that’s because it’s downright delicious. We love a creamy korma. It’s a dish that’s close to our hearts. This one is healthy, tasty and full of hearty flavour. Trust us, you’re going to love it. Feel free to use any combination of roast vegetables you like.
