BOSH! PB&J Pop Tarts

Personally, we think Valentine’s Day is all about treating yourself as much as it’s about treating the ones you love, so why not indulge in a little breakfast in bed this weekend?! You + these delicious BOSH! PB&J Pop Tarts = a match made in heaven.

 

Makes 4

1 x 320g sheet ready-rolled dairy-free shortcrust pastry

4 tbsp raspberry jam

1½ tsp plant-based butter

1 tbsp caster sugar

For the peanut butter frosting

4 tbsp icing sugar

3 tbsp smooth peanut butter

2 tbsp unsweetened plant-based milk

1 tsp vanilla extract

For the toppings

30g frozen raspberries

30g salted roasted peanuts

 

Preheat oven to 200ºC • Line a baking sheet with baking paper • Sieve • Whisk • Set a cooling rack over a baking tray

 

Make the tarts

Unroll your pastry sheet with the long edge nearest you and cut vertically into 4 even rectangles • Place 1 tablespoon of jam in the middle of the lower half of each rectangle • Fold the top halves over to form 4 rectangular parcels • Crimp the edges together with a fork to seal in the jam • Make a few holes in the tops of the tarts with a fork to let air escape • Rub the plant-based butter over each parcel and sprinkle with caster sugar • Place on the lined baking sheet and bake in the hot oven for 20 minutes

Meanwhile, make the glaze

Sieve the icing sugar into a bowl and add the peanut butter, plant-based milk and vanilla • Whisk together until smooth, adding a dash more milk if the glaze looks too thick

Prepare the toppings

Crumble the frozen berries into a bowl • Bash the peanuts to crumbs in a pestle and mortar or using a rolling pin

To serve

Remove the tarts from the oven and carefully slide them onto the cooling rack set over a tray • Spoon over the glaze, letting it cover the surface of the tarts and drip down the sides • Sprinkle over the toppings • Tuck in while they’re still warm, but be careful as they will be piping hot inside
